    MONTREAL STEAK SEASONING:
    2tbs black peppercorns
    coriander seeds
    1tbs dill seeds (dried dill leaves is fine too)
    2tbs paprika
    2tbs garlic powder
    1tbs onion powder
    1tbs red chili flakes

    - toast all the seeds and cool down
    - grind the seeds then mix in all the other spices!

    RED WINE DEMI GLACE:
    2c dry red wine
    2c port
    1/3c demi glace
    4tbs unsalted butter
    Salt to taste

    - combine the wines and reduce until a little syrupy
    - add in the demi glace and stir until combined
    - add in the butter and a little bit of salt and constantly stir until combined, adjusting for salt.

    MASHED POTATOES:
    4c Yukon Gold Potatoes
    1c+ half and half
    2c Unsalted Butter
    salt to taste

    - peel and cut the potatoes.
    - simmer in salted water until very very tender
    - strain and put it through a ricer (you can honestly skip this part, if you don't need it uber smooth)
    - in a pot, warm the cream up and add the potatoes until mixed thoroughly
    - add in the butter and mix over medium heat until combined
    - add more half and half until you get your desired consistency
    - adjust a final time with salt
